The Caspar Kitchen started serving fine dining quality breakfasts from what’s now the Green Room in 2002. From the beginning Dalen Anderson built a loyal kitchen team around the idea of having fun while producing beautiful food: not pancakes and never rubber chicken, but always tasty, innovative, as close to farm-to-table (before that was a thing!) as possible.
